Cheesy Pesto Pull-apart Scrolls


Pull-apart scrolls accompany so many meals in our house, delicious and cheesy and easy to whip up. This recipe calls for a pesto filling, but you can of course add any combination you like.


Ingredients

Dough ingredients

500g baking flour

1 & 1/4 cup lukewarm water

2 & 1/2 tea dry yeast

2 teaspoons salt

2 tablespoons olive oil

Filling ingredients

1/4 cup basil pesto

1-1 & 1/2 cups grated cheese


  1. Mix all of the dough ingredients together and then knead with a dough hook in a stand mixer or by hand until smooth and stretchy (about 5-8 minutes)

  2. Place dough in covered bowl in a warm place until the dough has doubled in size

  3. Oil a baking pan (around 18cmx25cm baking tin or a 23cm cake tin is perfect)

  4. On a floured surface stretch and roll the dough into a large rectangle, about 40cm by 60cm. A rolling pin will make this process really easy, but if you don’t have one, a wine bottle or similar will do the job too. You want your dough to be as thin as possible, the thinner it is the more layers you will get in the scroll.

  5. Spread the pesto across the dough covering completely from corner to corner. The back of a dessert spoon or a silicone spatula will make this easy

  6. Sprinkle with the desired amount of cheese over the top of the pesto

  7. Gently roll the dough all the way along the longest edge and keep rolling towards the other side until a sausage forms

  8. Cut into 18 pieces. The easiest way is to cut the two ends off then four even lengths then those four pieces cut into a further four pieces, about 4cm wide.

  9. Arrange in the oiled pan, neater is not always better, but definitely evenly spaced, there will be gaps and that’s ok, just try an make it similar gaps throughout the pan

  10. Preheat the oven to 180C

  11. Place the arranged pan back in the warm place covered with a tea towel and allow to rise again, it's ready for the oven the each scroll is getting close or touching its neighbour

  12. Bake for 15-20 minutes, check at 10-12 minutes to make sure it is cooking evenly, you might want to spin the pan around if it's browning too quickly on one side

  13. Remove from the oven when cooked to your liking and cool on a cake rack or serve piping hot, enjoy!
