Fig and caramelised onion pizza


Another less likely meal that Matty the super taster loves! The slight tartness of the onion, sweetness of the fig and creaminess of the cheese are a great balance! Great shared for nibbles or dinner for two.

Ingredients

Pizza base

1 onion

1 table spoon balsamic vinegar

3-4 fresh figs

100 grams soft goats cheese or feta

Olive oil


Method

  1. Preheat your oven to 200C

  2. Cut onion in half, and then thinly slice, fry in a pan with a little olive oil, sweating with the lid on for a few minutes. Once onion is sweated and has become translucent, add the balsamic vinegar and fry for a further few minutes, allowing all the liquid to disappear and the onion to caramelise.

  3. Rub a little olive oil over the pizza base, and then spread onion, goats cheese, and sliced fig over the pizza

  4. Cook for 8-10 minutes, until the cheese is starting to have crisp golden edges

  5. Cut and serve
