Another less likely meal that Matty the super taster loves! The slight tartness of the onion, sweetness of the fig and creaminess of the cheese are a great balance! Great shared for nibbles or dinner for two.
Ingredients
Pizza base
1 onion
1 table spoon balsamic vinegar
3-4 fresh figs
100 grams soft goats cheese or feta
Olive oil
Method
Preheat your oven to 200C
Cut onion in half, and then thinly slice, fry in a pan with a little olive oil, sweating with the lid on for a few minutes. Once onion is sweated and has become translucent, add the balsamic vinegar and fry for a further few minutes, allowing all the liquid to disappear and the onion to caramelise.
Rub a little olive oil over the pizza base, and then spread onion, goats cheese, and sliced fig over the pizza
Cook for 8-10 minutes, until the cheese is starting to have crisp golden edges
Cut and serve
