We devour this granola with yogurt and fruit, and I don’t think we’ve had a batch last longer than about ten days… Easy to make, and I love using up what's left in packets of seeds and nuts, it's perfect as the weather starts to warm up!
Ingredients
4 cups rolled oats
1 cup seeds (ie. sunflower, pepitas, sesame, hemp)
1 cup nuts (ie. pecan, almond, walnut, hazelnut)
1 cup coconut (ie. desiccated, fine, flaked, shredded)
1 tea ground ginger
2 tea ground cinnamon
1 tea fine ground salt
2/3 cup coconut oil (melted/runny)
2/3 cup maple syrup
Method
Preheat the oven to 160C and line two large baking trays with baking sheets.
Roughly chop your nuts (I love almonds and pecans), and add to a large mixing bowl with the oats, seeds, coconut, spices and salt, mix well.
Pour the coconut oil and maple syrup over the dry ingredients and mix everything together well.
Pour half the mix onto each tray, spread out and press down lightly.
Bake in the oven for 30-40 minutes, halfway through cooking swap the tray location in the oven and roughly turn the granola, making sure to turn the toasted bits into the mix, then press down lightly again.
When toasted to satisfaction, remove from the oven and leave it, literally do not touch until it has completely cooled, this is the best way to achieve those lovely clusters.
Gently tip into a large airtight container, the large clusters will easily fall into smaller clusters, and store for up to a week or two.
Storage
I simply store in a large airtight jar or container for a couple of weeks. I have heard people store granola for up to three months in the freezer, but it definitely doesn't last that long in our house.
Notes
Use any seeds and nuts you have on hand, you'll find you end up with favourites, mine are almonds and pecans for the nuts and sesame, pepitas and sunflower for the seeds
If you don't have maple syrup, you can substitute, I've used honey and even a little golden syrup mixed with what maple syrup I had left
I love coconut, but you might not, just substitute to your hearts content!
It's really easy to sneak some goodies in here too like buckwheat, quinoa flakes, LSA mix, etc, get creative!
We sometimes even have a little jar on the bench, and hands are dipped in to a little snack on the go
