One Cup Zucchini Fritters


When I say one cup, it's because these are my lazy fritters, and everything is about 1 cup, I don't think I have ever made a recipe that is the same, I'm forever adjusting, so if you think they are too thick or too runny, just adjust!


Ingredients


1 medium grated zucchini, a bit of juice squeezed out

1 cup flour

2 cup frozen corn

1 cup milk

2 eggs

1/2 cup crumbled feta

Flavour (1 tea smoked paprika or 2 tab sweet chilli, or salt and pepper)


Method


  1. Chuck everything in a bowl and mix! If it is a bit thick, add more milk, if it's a bit runny, add more flour.

  2. Let it stand in the bowl for a few minutes before ladling into a hot and well oiled pan.

  3. I make them slightly rounder than a golf ball and I like to cook until golden on both sides.

  4. Serve with sweet chilli or an avo smash/guacamole.


Notes


  • I've made this batter with gluten free flour, nut mylk, no cheese, forgotten eggs, doubled the corn, I encourage you to mix it up with whatever you have on hand!
