Ingredients
Pasta
Broccoli
Cherry tomatoes
Corn
Cooked sausage
Toasted slivered almonds
Goat's cheese
Method
Once the pasta is close to cooked, I throw in broccoli and some corn, then drain after saving some cooking water.
Stir through the pesto and as much cooking water as it needs. Then add everything else, I used some torn up sausage, cherry tomatoes, toasted slivered almonds and goat’s cheese.
Notes
I’ve been making variations of this for years, I use whatever I have, zucchini, spring onion, asparagus, capsicum, 4-bean mix, prosciutto, chicken, pistachios, parmesan cheese, bocconcini.
