When it comes to comfort food, what's better than a humble sausage roll?
I’ve tried many variations of sausage rolls and by far my favourite is this recipe, with a little bit of curry powder. Simple and delicious, I love to cook a big batch and throw some in the freezer. Makes about 70
Ingredients
1 brown onion, finely diced
2 carrots, grated
1 kg beef sausage mince
1 egg
1/2 tablespoon curry powder
6 sheets of puff pastry
Milk
Sesame seeds
Method
Pre-heat oven to 200° and line some large baking trays with baking paper.
Fry and then sweat the onion, then add to a large mixing bowl with a grated carrot, beef sausage mince, egg and curry powder. With clean hands mix together until well combined.
Take your sheets of puff pastry and slice length ways, spoon the mix into a long sausage about a third of the width of the pastry, then using a pastry brush, apply milk along one length of the pastry, then fold the dry side of pastry over the meat, then keep rolling over onto the side with milk.
Brush the top with more milk and then sprinkle sesame seeds over the top, finally cut into six pieces and repeat with the rest of the pastry. Bake for 20 minutes and then serve with a chunky chutney or sauce.
If you have any leftover pastry try a little bit of Vegemite and some grated cheese rolled into little scrolls for a lovely little snack.
