One of my fondest childhood memories is my mum baking this apple cake. My mother baked this cake for every occasion. And if she was baking a cake to take somewhere, she always baked a second to leave at home.
Ingredients
2 large Granny Smith apples, peeled and sliced
1 cup sugar
125g butter
1 beaten egg
1 ½ cup flour
1 tea baking soda
2 tea mixed spice
1 tea cinnamon
½ tea salt
½ cup sultanas
Method
In a mixing bowl, sprinkle apples with sugar
Mix beaten egg with melted butter and add to apples
Sift in dry ingredients then add sultanas
Pour batter into a greased and lined 20cm cake tin
Bake for 50-60 min at 160C
Sift over with icing sugar and serve.
Notes
Very moist and keeps well for a couple of days.
